2-Ingredient Low Cal Pumpkin Muffins

If you love pumpkin season as much as I do then you probably have at least 4 cans of %100 pumpkin in your cabinet. These muffins are perfect to use some of those up. These muffins are not only SO EASY and delicious, they are low calorie! They are about 130 each, which is way better than regular cupcakes or pumpkin bread. No added fat or oils to these, and they’re moist as ever.

The only other ingredient you need is spice cake mix which you can buy for $1.50 at your grocery store. Here are the steps to making them:

  1. Preheat the oven to 350 degrees
  2. Pour the cake mix in a bowl
  3. Dump the whole can of pumpkin into the bowl
  4. Mix
  5. Distribute to muffin pan (I used an ice cream scoop so I had an even amount in each)
  6. Bake for 17-20 minutes
